I would like to know how to cook steaks and seafood with a infrared broiler.

I just accepted an exec position with a new steakhouse opening up. Instead of a charbroiler, they opted for an infrared broiler to cook steaks. I have never used on of those in that capacity. Will someone please tell me how to cook a steak in it from start to finish. Thank you.
